Seminar „MICHELIN Stars and the way towards“, 15th of November

Ingo Hettig shares insights on achieving MICHELIN stars, international standards, and development opportunities for Estonian restaurants.

Speaker: Ingo Hettig – one of the most influential international fine dining experts and consultant for MICHELIN-starred restaurants. He is based in Stuttgart, Germany.

+ WHY are MICHELIN stars a globally sought-after "currency" for chefs and restaurants?
+ HOW to achieve culinary excellence in the food sector of fine dining restaurants?
+ WHAT are effective strategies for fine dining restaurants on their way to the MICHELIN stars?
+ What are the key development areas for Estonian restaurants to move from a MICHELIN recommendation to a BiB Gourmand or star?

Furthermore, Ingo Hettig will report on the experiences, findings and results of the "OPTIMIZATION WORKSHOP FOR DISHES", which will take place on the 14th of November and 7 Estonian chefs will participate. 

The seminar and workshop is organized in cooperation with Visit Tallinn, Festival Tasty Estonia, The Estonian Chefs Association and The Estonian Hospitality Cluster.

Ingo Hettig

is fine dining expert, international management consultant for FINIE DINING and MICHELIN-starred restaurants. He also advises start-ups and established companies in the field of food and beverage trade or production for top gastronomy. Together with partners he developed a new FINIE DINING GUEST CHEF concept, the restaurant CLOUD9, in Limassol, Cyprus. It was put into operation in August 2025. Among other things, Ingo Hettig searches and selects young talents, the guest chefs at CLOUD9 from all over the world.
He is also known worldwide as a creator under the pseudonym @travelgastronomist on Instagram (>280k) and TikTok (>30k)

Who are we expecting to participate?

We welcome professionals and entrepreneurs from the hospitality sector — whether they are already featured in the internationally renowned MICHELIN Guide, on their way to earning stars, or just beginning to explore this prestigious gourmet roadmap.

Our target audience includes:
+ restaurant owners and entrepreneurs
+ ambitious chefs and sous-chefs, including chef-owners
+ young chef talents and trainees
+ service professionals, such as restaurant managers and sommeliers
+ investors interested in the fine dining and hospitality sector

The seminar is open to up to 100 participants, and up to 3 representative from each company is welcome to attend.
The seminar will be held in English.

Practical Information and Participation Conditions:

+ when selecting participants, we aim for a maximum of 60% to come from Tallinn, with the remaining 40% from other regions of Estonia
+ the company must have export potential (e.g. an English-language website or Facebook page presenting its services). For new businesses, the selection will consider the founders’ previous achievements
+ those who are not selected will be placed on a waiting list. When making the selection, we will ensure that at least one person from each registered company can participate
